1-1/2 cup dark brown sugar
1/2 cup margarine
2-1/2 tbsp. instant coffee
1 tbsp. vanilla
2 egg whites
1 egg
2 cups all-purpose flour
2 tsp. baking powder
1/8 tsp. salt
1/2 cup chocolate chips

Instructions

Combine dark brown sugar, margarine and instant coffee in a saucepan. Cook 4 minutes or until smooth. Combine vanilla, egg whites, egg and beat until smooth. Slowly add some of the warm sugar mixture to warm up the eggs. Add to the saucepan. Combine flour, baking powder and salt. Add to the saucepan; stir until blended. Stir in chips. Pour into a greased 13x9-inch baking pan. Bake at 350°F for 18 minutes.
