4 plum tomatoes, seeded and cut into 1/2 inch dice
1 cucumber, seeded but not peeled, cut into 1/2 inch dice
1 cubanelle pepper, cut into 1/2 inch dice
3 to 4 tbsp. minced red onion
5 basil leaves, shredded
3 cups crusty bread cubes
3 tbsp. good olive oil
Salt and pepper to taste

Instructions

Combine the vegetables and the basil. Season to taste with salt and pepper and allow to stand for 30 minutes to blend the flavors. Stir in bread cubes and drizzle with olive oil. Toss to combine thoroughly.

I could eat this salad every day when the garden is overflowing with tomatoes and cucumbers. It's similar to the Italian panzanella tomato-and-bread salad, but includes a few more delicious ingredients.
