Herbed Tomato and Cheese Salad

5 lg. fresh tomatoes, cut into wedges
1 md. green pepper, chopped
1/2 sm. red onion, thinly sliced
1-1/2 cup shredded Monterey Jack cheese
1/4 cup stuffed green olives, sliced
1/2 tsp. dried basil

Dressing

6 tbsp. vegetable oil
2 tbsp. red wine vinegar
2 tbsp. minced fresh parsley
1 tbsp. minced fresh chives
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper

Instructions

Place tomato wedges in a shallow dish. Cover with green pepper, onion, cheese and olives. Sprinkle with basil. In a small bowl, mix dressing ingredients. Spoon over salad.
