Fettucine Alfredo Make-Over

8 oz. uncooked fettuccine
1/3 cup margarine or
butter
1-1/2 tsp. flour
1/4 tsp. white or
black pepper
1/8 to 1/4 tsp. nutmeg (optional)
1/2 cup half and half
1/2 cup freshly grated Parmesan cheese
1 tbsp. chopped fresh parsley (optional)

Instructions

Cook fettuccine as desired. Drain; keep warm. Melt margarine in large skillet over low heat; stir in flour, pepper and nutmeg. Gradually stir in half & half. Cook on low heat 5 minutes or until mixture thickens slightly, stirring frequently. Stir in cheese and cook just until cheese is melted, stirring constantly. Immediately stir in cooked fettuccine; toss to coat with sauce. Sprinkle with parsley; serve immediately.

Well, we used Kraft grated parm cheese instead of fresh and milk instead of half and half cream (you use what you have at 1am), but it turned out good just the same!!

I like this recipe. The nutmeg makes a very nice taste. I added about 2 garlic gloves and about a tsp of basil to it. I added these to the butter while melting. The aroma is awesome. i also sprinkle some parmesean on top before serving.
