3-1/3 cup flour
2 tsp. baking soda
3 cups sugar
1-1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3/4 cup oil
4 eggs, beaten
2 cups grated zucchini (or pumpkin if you want to make pumpkin bread)
2/3 cup water

Instructions

Mix dry ingredients, then beat in the oil, eggs, zucchini and water until batter is smooth. Pour into 2 greased loaf pans, and bake at 350°F for one hour.
