Wild Rice Casserole

1 cup wild rice, barley or
combination
1/4 lb. butter or
margarine
1 onion, minced
1 can (4 oz.) mushroom pieces, drained
3 cans chicken broth

Instructions

Wash rice. Melt butter in casserole. Add onions. Remove from heat. Add mushrooms, broth and rice. Cover with foil. Bake 1 to 1-1/2 hours at 325°F.

Personally, this is good cold, too, as a leftover.
