Ingredients

2 carrots, sliced
1 leek (white only)
1/2 celery, sliced
1/2 fennel, sliced
4 shallots, chopped
4 button onions, sliced
1 bouquet garni
1 clove garlic, minced
13 fl. oz. dry white wine

Instructions

Place all ingredients in a large pot and cover with cold water and bring up to the boil slowly. Cook out for no longer than 30 minutes, then strain.

Author's Comments

This stock is especially good for poaching fillets of fish, or of course soup.
