Swiss Steak





2 lbs. beef round steak, 1 inch thick
1/4 cup flour
1/4 tsp. pepper
1 tsp. salt
1 tsp. shortening
1/2 cup onion, chopped
1 lb. can tomatoes, cut up
2 tbsp. green pepper, chopped


Combine flour, salt and pepper; pound into meat. In large skillet, brown meat on both sides in hot shortening. Top with onion and tomatoes. Cover; cook over low heat about 1-1/2 hours, or until tender. Or, transfer to baking dish and cook covered at 350°F for 1-1/2 hours. Add green pepper; cook 15 minutes more. skim off excess fat. Thicken juices if desire. Season to taste.
