Sweet Carrot Casserole

This is the best way to eat your carrots, sweet and moist almost dessert-like.

2 cups cooked carrots,salted and mashed (about 15 raw carrots or a 2 lb bag)
1 stick butter
2 eggs well beaten
1 t. vanilla extract
3 tablespoons flour
1 tsp. baking powder
1 cup sugar
1/8 tsp. cinnamon

Optional topping:
1/2 cup crushed cornflakes cereal
1/4 cup chopped pecans
1/4 cup light brown sugar
6 tablespoons butter, softened

Sweet Carrot Casserole


Directions
Blend all casserole ingredients together and pour into greased 8 x 8 casserole dish. Bake at 350 degrees for 40-45 minutes.

Topping Directions:
Mix together all topping ingredients with pastry blender until crumbly. After casserole has baked 25 minutes sprinkle topping evenly over casserole and bake 15 minutes more.
