Sausage Strata

A very easy brunch or breakfast dish that you can make up the night before and just pop into the oven the next morning.

1 lb. bulk pork breakfast sausage.( I like Jimmy Deans)
8 slices of white bread with crust removed.
1 Tablespoon butter or
margarine.
3 beaten eggs.
1-3/4 cup of whole milk or
half & half.
1-1/2 cup sharp cheddar cheese shredded.
1/4 to 1/2 tsp. hot sauce. (more if you like it real hot)

Instructions

1. In a large pan cook sausage untill no longer pink then drain off grease.
2. Spread the butter or margarine on one side of each slice of bread.
3. To assemble, in a ungreased 8x8x2 inch baking dish place four of the slices of bread, buttered sides up. Then spread half of the cooked sausage and half of the cheese over the top of the bread. Repeat layering with the remaining bread and sausage and more cheese. Hold off on 1/2 cup of cheese to use as topping.
4. In a bowl combine eggs, milk,and hot sauce. mix with a wisk or mixer. Pour egg mixture over the layers of bread and sausage layers. Press down on layers with a spatula to make sure all layers are moistened with egg mixture. Cover with plastic wrap and refrigerate for 2 - 24 hours.
Next morning Preheat oven to 325.
Remove plastic wrap and bake in oven for 35 - 40 minutes or until the center appers to be set and the edges turn a little bit golden brown. Immediately after removing from oven sprinkle with the remaining 1/2 cup of cheese on top. Let it stand for five minutes or until the cheese is melted.

I always make this the night before it gives the egg mixture time to soak into the bread. And who wants to work hard first thing in the morning before your first cup of coffee kicks in?
