3 lbs. sirloin tip roast
3 tbsp. peanut oil
1 can beer, room temperature
6 to 8 green pepper rings
6 to 8 onion rings
Pimento strips
Salt and pepper, to taste
1 cup ketchup


Salt and pepper roast and sauté on all sides in oil. Place in roasting pan. Pour can of beer over roast, coat with ketchup and arrange green peppers, onion rings and pimento strips over top. Bake uncovered for 350°F for 1-1/2 to 1-3/4 hours. Baste occasionally during last hour of cooking. May cover loosely with aluminum foil to prevent excess browning.
