2 cups fresh tomatoes, chopped
2 cups red potatoes, peeled and cubed
1/2 cup red onions, diced
1/4 cup extra-virgin olive oil
1 tbsp. fresh basil, chopped
2 tbsp. fresh parsley, finely chopped
2 tsp. dried oregano
1/4 cup water
1/2 tsp. paprika
3/4 tsp. salt
1/2 tsp. freshly ground black pepper
2 cups baked tofu or
firm tofu, diced

Instructions

Combine all the ingredients in a casserole dish and mix well. Cover and bake in a preheated 425°F oven for 45 minutes.
