Prawn, Quinoa & Tangerine Salad

A light, refreshing and flavoursome salad that’s a well balanced meal nutritionally. The combination of these flavours leaves your taste buds satisfied and your body nourished.

65g/2.5oz quinoa
15g/0.5oz spinach
100g/3.5oz cooked prawns, peeled
1 tangerine
1/2 avocado
2 beetroots
Lemon juice

Instructions

1.Rinse the quinoa in cold water before cooking.
2.Cook the quinoa according to the pack instructions (for 50g quinoa use 100ml water, bring to the boil then simmer for 15 mins).
3.Peel the tangerine and chop the avocado and beetroot.
4.Plate everything up and mix in the quinoa.
5.Serve with juice from 1 lemon or the salad dressing of your choice. You could try my delicious sesame dressing.
