1-1/2 cup unbleached all-purpose flour
1 cup bran
1 tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 cup roasted peanuts chopped
2 eggs, lightly beaten
1 can (8 oz.) crushed pineapple, including juice

Instructions

Add wet ingredients to dry ingredients and stir thoroughly. Bake at 350°F in a greased loaf pan for 35-40 minutes. Test with a toothpick for doneness. (When toothpick is dry, bread is done.)
