Preheat the oven to 425°F.
I've never had a roast chicken with more flavor than this one. Really easy, too. The veggies roast and get caramelized in the bottom of the pan and are SO good. Make sure you get the fennel bulb, it adds a lot of flavor to the veggies. And the fresh thyme is really important, too. From Barefoot Contessa.
