Pennsylvania Potato Casserole

1 cup mashed potatoes
2 lg. eggs, beaten
1 cup milk
4 slices bread
1 sm. onion, diced
2 tbsp. butter
Salt, to taste
Pepper, to taste

Instructions

Thoroughly mix potatoes and eggs with a fork. Add milk and set aside. Cut bread into 1/2-inch cubes and brown with onion in the butter. Stir onions and bread into potato mixture and add seasonings. Turn into a greased casserole and bake in preheated 375°F oven for 1 hour.
