Pea & Sweetcorn Fritters

These mini pea and sweetcorn fritters make a delicious healthy snack or breakfast which we sometimes serve with fried or poached eggs.

100g/3.5oz frozen peas
100g/3.5oz frozen sweetcorn
2 spring onions
1 egg
5 tbsp. milk
1/2 tsp chilli flakes
2 garlic cloves
1 tsp. apple cider vinegar
125g/4.5oz almond flour
Olive oil to fry


1.Add all the ingredients to a food processor and blitz until well combined. If you don't have a food processor you could also just mix the ingredients in a large bowl. The fritters will have a different texture, but you will still get the same delicious taste.
2.Add a splash of olive oil to a frying pan to heat, then add 1 teaspoon of the mixture to the frying pan and flatten with a spatula.
3.Fry for 2 minutes over a medium heat then flip and fry the other side for 2 minutes.
4.Repeat until all the mixture is used up.
