Mrs. Mackinnon's Christmas Fruit Cake





2-1/2 cup golden raisins (12 oz.)
2 cups dark raisins (9 oz.)
1-3/4 cup dried currants (8 oz.)
1-3/4 cup chopped glacéed fruits (such as red cherries, pineapple, and apricots)
3/4 cup chopped candied orange peel
1/2 cup water
1/2 cup plus 6 tbsp. dark rum
2 tsp. each grated orange and lemon peels
1 tsp. Lyle's Golden Syrup
3/4 tsp. baking soda

This is third year making this. Following recipe for cake. I switch up dried fruit with glazed fruit dark and light raisins as well as dried cherries, apricot, dried cranberries. Each time it is wonderful. I make it six weeks ahead wrapping in rum soaked cheesecloth and then in foil. I check cheese cloth every 4-5 days to be sure it doesn’t dry out. Recipe is perfect as written!
