1 lobster, boiled
2 tbsp. butter
1 sm. onion, finely chopped
1 tbsp. flour
1/2 cup dry white wine
1/2 cup clam juice
1 tbsp. sherry
1 tbsp. heavy cream
1 tsp. Dijon mustard
1/4 cup Parmesean cheese
1/4 tsp. salt
1/4 tsp. pepper
1 tbsp. chopped parsley

Instructions

Cut lobster lengthwise in half, cutting completely through shell to make 2 pieces. Remove lobster meat from tail and claws and cut into 1 inch pieces. Scoop out shell, rinse well, drain, and reserve.

In a small saucepan, melt butter over medium heat. Add onion and cook, stirring often until softened, 2-3 minutes. Add flour and blend well. Cook, stirring, 1 minute. Whisk in wine, clam juice, and sherry. Raise heat to medium high and cook, stirring often, until thickened and smooth, 2-4 minutes. Add cream, dijon, and half of parm. cheese. Remove from heat and add lobster pieces. Season with salt and pepper.

Preheat broiler. Fill lobster shells with lobster and sauce. Sprinkle remaining parmesean cheese on top. Broil about 6 inches from heat until lightly browned, 3-5 minutes. Garnish with parsley and serve at once.

Author's Comments

If the process of boiling a lobster seems intimidating, many of the larger grocery stores will boil or steam a lobster for you ahead of time. Give the store about 15 minutes to do this. If you don\'t have a broiler, you can place the lobster in a baking pan and heat in a standard oven at 450°F until the Parmesean begins to brown. This dish is a real \"wowser\", especially for romantic occasions. Good luck!
