6 cups vegetable oil for frying
1 cup yellow cornmeal (not stone ground)
1/8 tsp. black pepper
3/4 tsp. salt
2-1/2 tsp. baking powder
1/2 cup all-purpose flour
1 lg. egg
3/4 cup whole milk

Instructions

Preheat oven to 300°F. Heat the oil in a large heavy pot to 320°F or use a deep fryer. Whisk the cornmeal, flour, baking powder, salt and pepper in a bowl. Whisk the egg and the milk in a small bowl, then add it to the cornmeal mixture and just stir to combine.

Working in small batches, slowly add a tablespoon of the batter to the hot oil. (I dip the tablespoon in the oil before each one so the batter won't stick to the spoon.) Let it fry and turning golden brown, about 2-3 minutes.

Remove from the oil with a slotted spoon and let drain on paper towels briefly. Transfer the now cooked hush puppies to a shallow baking pan and into the oven so you can finish the rest of the hush puppies in the fryer.

Serve with honey butter or just honey.

When I go down south these are almost as big a side dish as grits. You get use to them and you can add things to it. I have had them with bacon, onions, corn and plain.

OK Einar, Now you went and did it! These Hush Puppies taste just like the ones that my mother use to make. Down south we use to serve them with fried fish and shrimp. They are a must with fried catfish and the honey butter is also one of the best things to dip them in. You did this recipe right.
