4 md. potatoes, peeled
3 slices bacon, diced
Butter or
oil for frying
1 onion, sliced
1 tbsp. chopped fresh oregano

Instructions

Parboil potatoes (or microwave on HIGH for 5 minutes). Cut into medium thick slices. Fry bacon until fat is transparent. Add butter and fry onion and potato with bacon, turning until browned. Sprinkle with oregano. Serves 6.
