Hamburger Quiche

1 pie shell
1 lb. hamburger meat
1/3 cup minced onion
1 cup shredded sharp cheddar cheese
3 eggs
1 cup whipping cream
1-1/2 tsp. salt
1/2 tsp. white pepper

Instructions

Prepare pastry shell. Preheat oven to 425°F. Brown hamburger meat in skillet, then drain off excess fat. Mix meat and onion. Reserve a small amount and place remaining meat mixture in pastry shell. Sprinkle cheese over meat. Beat eggs, cream and seasonings and pour over meat and cheese. Bake 15 minutes. Reduce oven temperature to 300°F and bake 30 minutes longer. sprinkle remaining meat on top and bake 5 minutes more. let pie stand 10 minutes before serving. This quiche is good for family supper with a salad accompaniment.

This recipe turned out pretty good for my first attempt. A couple of problems though: I was not sure if I was to bake the pie crust first. Also, when I poured the beaten egg mixture on top of the hamburger it ran over. Maybe a bigger pie pan? That 9 inch didn't work. Anyone have any suggestions for me on these problems?
