Garlic Mojo

Here is a recipe that I found by Rick Bayless. It is very good and you can use it on many dishes.

4 lg. heads of garlic or
10 oz. (about 1 3/4 cup) peeled garlic cloves.
2 cups olive oil.
1 tsp. salt
1/2 cup fresh lime juice

Instructions

Preheat oven to 325
Break the heads of garlic apart and peel.
Mash the cloves with the side of a kitchen knife. Just mash slightly.
Stir together the garlic and the olive oil in a 8x8- inch pan. Make sure the garlic is submerged.
Put the pan in the oven for 45-55 minutes. Until the garlic is lightly brown.
Add the lime juice and bake for 20 minutes for the garlic to absorb the lime juice.
Remove from the oven and let cool for about 10 minutes.
Using a hand held potato masher or a large fork mash the garlic into a coarse puree.
Pour the mixture into wide mouth storage containers. You can keep refrigerated for up to 3 months.

I have made this Mojo many times and have put it on many things like grilled fish, steak, shrimp, and have even put it on pop corn! It is a great all around sauce for many things.

I have even added some red pepper flakes to it for just that little kick. Just wanted to pass this recipe along it is that good!
