1 cup peanut butter
1 cup sugar
1 egg

Instructions

Preheat oven to 350°F. Mix all ingredients together. Make small balls, then dip a fork in flour and make criss crosses on balls. Bake for 10-12 minutes.

I've only tried the basic recipe so far and my husband and kids (19 & 25) and I all love them! The only thing I did different is that I didn't want to wait to make a bunch of batches on my one small cookie sheet, so I made a batch in muffin tins. My husband liked those better than the ones off the cookie sheet. His only complaint was that I made them a little too thick , so I need to put a smaller amount in each cup next time and I can make twice as many. I can't wait to try some variations on this simple, quick recipe!

these are the best ever peanutbutter cookies. I've been baking them for 50 years and they are a hit with everyone.
I add a Tablespoon of vanilla most of the time, but its not necesary. For those of you eho like chocolate with your peanutbutter,,try this..melt 1 cup chocolate chips & 1 Tablespoon butter in a zip lock plastic bag in the micowave when melted squish bag to blend and smooth and clip off SMALL piece of the corner of the bag and drizzle over cookies,,these really are the best ever and I have won many cookie contests with these little gems. NOte: dip fork in sugar instead of flour and if you decide to do the choclate drizzle in the microwave do it in 20 second intervals...enjoy ! it tool longer to type this than to make them lol

My family just loved these and they were so easy to make. I was worried about not adding flour but they turned out perfect. We will definitely be making these again.
