3 lg. potatoes, peeled or
unpeeled, boiled until soft
boiled til soft
2 tbsp. onion, finely chopped
2 tbsp. celery, finely chopped
2 tbsp. green bell pepper, finely chopped
2 tbsp. whole-wheat flour
1 tbsp. minced fresh parsley

Instructions

Shred the poatoes in a food processor or with a grater. Combine with the remaining ingredients and shape into four patties. Cook on a nonstick griddle until browned on both sides, about 10 minutes.
