Christmas Tree Spice Cookies

1 cup unsalted butter
1 cup sugar
1 lg. egg
1/2 cup honey
4 cups flour
3/4 tsp. baking powder
1/2 tsp. salt
2 tsp. groung ginger
1 tsp. cinnamon

Instructions

In a bowl, cream the butter and sugar together until very light in color. Add the egg and honey and continue beating til mixture is light and fluffy. Sift the flour, baking powder, salt, ginger, and cinnamon together and stir into the butter-sugar mixture. Wrap the dough in wax or foil and freeze in the freezer for 1/2 an hour.

Preheat the oven to 375°F.

Roll out the chilled dough until it is about 1/4-inch thick and cut it with a christmas tree shaped cookie cutter, or if you want them circular, use a glass. Place the cookies onto a lightly greased baking sheet and bake for about 12 minutes, or until they are golden.

Am searching for a "Beef Tounge cookie" receipe. They are very crisp and shaped like a tounge( thus the name.) spicy and a rich brown color. About 1/4 inch thick after baking.My mother used to make them especially at Christmas time.

I like this spice recipe better than traditional sugar cookies. They definitely need some sort of icing...I chose to dip mine in melted chocolate. A butter cream or ginger icing would be nice too.

Thank you so much for this great Christmas recipe. I used corn syrup in replace of the honey, and my cookies turned out awesome! Can't wait to leave some for Santa ; )
