1 can cream of chicken soup
1 cup milk, divided
1/2 cup onion, chopped
1 pkg. (3 oz.) cream cheese, softened
1/4 cup celery, chopped
1/4 cup carrots, shredded
1/4 cup parmesan cheese
1/2 tsp. salt
3 cups chicken, cubed and cooked
1 pkg. (10 oz.) frozen broccoli
1 egg
1 tbsp. oil
1 cup buttermilk complete pancake
1 cup cheddar cheese, shredded
1/4 cup sliced almonds (optional)

Instructions

In a large saucepan, combinesoup, 1/2 cup of milk, onion, cream cheese, celery, carrots, parmesan cheese and salt. Cook and stir until the mixture is hot and cream cheese is melted. Stir in the chicken and broccoli; heat through. Pour into an ungreased 2 quart baking dish.

In a medium bowl, combine the egg, oil and remaining milk. Add the pancake mix and cheese; blend well. Spoon over hot chicken mixture. Sprinkle with almonds if desired. Bake, uncovered, at 375°F for 20 to 25 minutes or until golden brown.

When surfing the internet for recipes, I can't help but noticing that in American recipes for e.g. (chicken) casseroles cooks often use canned (chicken) soups. This is not to critisise the cheddary chicken potpie, which I haven't tried yet, because it's all so wét. My critisism includes all recipes with canned this or that, which are fattening, too!

One of my recipes: marinate chicken joints or legs in lemon(lime) juice, Olive(not extra virgin)or sunflower oil, as much garlic as you like, chopped onion, salt, black pepper, dash of white wine in oven proof dish overnight or as many hours as you like on the day of cooking. Preheat oven 200 degrees Celsius. Put dish in oven for approx. 1 hour, turn chicken halfway. Everybody loved this!

May I add another healthy recipe? Preheat oven 200 degrees. Scrub small new potatoes (cut bigger ones up). Put them(skin on)on ovenproof paper on baking sheet. Add (sea)salt, pepper, fresh thyme or rosemary, chopped garlic(optional, but delicious and healthy!), dash of olive or sunflower oil. Fold ovenproof paper over potatoes and bake for appr. 45 minutes. You can do this in one big portion or portions per person in individual pieces of ovenproof paper. Serve portions per person in paper on plates and let everybody unfold her/his portion. Even potato haters (here in Holland it's either boiled potatoes or french fries) loved this. Sooo healthy and sooo good!
