1 can (15 oz.) black beans, drained and rinsed
1 lg. ripe tomato, diced
1 lg. ripe avocado, diced
1/2 md. lime, juice of
1 tbsp. dried or
snipped fresh cilantro

Instructions

Mix all ingredients.

Author's Comments

Serve over greens, with pita bread or tortilla chips. Good with a little sour cream. I always make Mahatma Saffron-Yellow Rice to go with it, the yellow contrasts nicely with the red tomato and green avocado against the black beans; very dramatic. "One eats with one's eyes first."
