3 tbsp. olive oil
2-1/4 lb. shin of beef, cut into 4 cm in pieces
7-7/8 oz. chorizo, diced
1 onion, diced
2 carrots, cut to same size as beef
2 parsnips, cut to same size as beef
2 tbsp. plain flour
1/3 qt. red wine
5/8 qt. beef stock
salt and freshly ground black pepper
7-7/8 oz. self-raising flour
pinch salt
3-1/2 oz. shredded suet
2 tbsp. fresh rosemary, finely chopped
2 lbs. potatoes, peeled and cut into chunks
7/8 oz. fresh grated horseradish,
7/8 oz. butter
1/8 qt. flsingle cream
