Baked Caramel Corn

6 quarts



236.59 ml. margarine
473.18 ml. brown sugar
118.29 ml. corn syrup
4.93 ml. salt
2.46 ml. baking soda
5.68 l. popped popcorn
Vanilla extract


Make popcorn and put in a large roasting pan. Set aside. Melt margarine in pan. Stir in sugar, corn syrup and salt. Bring to a boil stirring constantly. Boil without stirring for 5 minutes. Remove from heat. Stir in baking soda and vanilla. Pour over corn mixing well. Bake at 250°F for 1 hour. Stir every 15 minutes. Remove from oven. Cool, break apart and store in tightly covered containers.

This recipe is the greatest. I have even made it using Chex Mix, Cheerios, Pretzels, nuts, etc. It is a wonderful gift giving traditions at Christmas.

Good job Bob! I have the exact recipe and everyone loves it! Great with M&M's mixed in or peanuts. One teaspoon of vanilla.
