Apple pie cookies

2 cups all-purpose flour
1 tbsp. corn starch
1 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. salt
1/4 tsp. nutmeg or
apple pie spice
1-1/2 stick unsalted butter
1/2 cup light brown sugar, firmly
4 tbsp. granulated sugar
1-1/2 tsp. pure vanilla
1 lg. egg
1-1/2 cup apple pie filling

Icing optional

1-1/2 cup shifted powdered sugar
1-1/2 tbsp. milk or
apple cider (add liquid amount to your own consistency)
1/2 tsp. pure vanilla
1 pinch cinnamon

Instructions

In a medium whisk together flour, cornstarch, baking soda, cinnamon, salt, and nutmeg or apple pie spice.
In stand mixer cream butter and both sugars until light and fluffy approximately 2-3 minutes. Add the vanilla. and egg, mix until combined, add flour mixer. mixing until fully combined, remove bowl from mixer and add the apple pie filling and stir until fully distributed. Using a cookie scoop that measures about 1 heaping Tablespoon of dough, drop the round ball of dough onto parchment line sheet pan. Bake 12-14 minutes or until lightly golden brown around the edges. Remove from the oven and let cool in pan 5-10 minutes, then remove to cooling rack and cool completely.

Optional: Mix together icing ingredients and drizzle over cool cookies.

Author's Comments

Recipe adjustment from my grandmother, she used fresh apples instead of the filling. This can be done also, using granny smith or half golden delicious/half granny smith (2 each, using your apple pie recipe)
