Angel Hair with Prosciutto

3 tbsp. olive oil
3 tbsp. butter
1/2 lb. sliced mushrooms
3/4 lb. prosciutto, chopped
3 md. tomatoes, finely chopped
1 tsp. sage
1 cup heavy cream
1 lb. angel hair or
capellini
Salt and pepper to taste
1/2 cup parmesan cheese
1/2 cup finely chopped parsley

Instructions

Saute mushrooms in heated oil & butter until lightly browned, about 8 minutes. Add prosciutto, tomatoes, sage and cream. Heat on high until sauce begins to thicken; reduce heat to very low to keep warm while pasta cooks. Cook pasta; drain and place in heated serving container. Season with salt and pepper; toss with sauce and Parmesan cheese. Sprinkle with parsley and serve immediately.
