INGREDIENTS
1 red pepper
1 yellow pepper
1 orange pepper
1 green pepper
1 yellow onion
1 zucchini
12 mushrooms
3 cloves garlic, sliced
1/4 cup chopped parsley
1/4 olive oil
Salt
INSTRUCTIONS
Chop all vegetables into large pieces (each pepper should cut into 12 pieces). Place in large bowl, sprikle with salt and add garlic, parsley and oil. Mix well and let marinate for at least 1/2 hour. Place on skewer in random fashion and grill for 10 to 15 minutes.
CHEF COMMENTS
If you don't have a grill you can easily place these in the broiler for the same amount of time.
