SERVINGS

INGREDIENTS

1 md. shallot, diced
3 cloves garlic, crushed
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
1/4 cup honey
Olive oil, to taste
1 bunch spinach
1/2 cup pecans
1/2 cup bacon bits
8 sm. white mushrooms

INSTRUCTIONS

Warm balsamic vinegar, Dijon mustard and honey in a saucepan over low heat. Add shallots and garlic to sauce; mix and stir over warm heat until shallots and garlic are soft. Add olive oil to even the taste of the balsamic vinegar and stir until emulsified.

Wash spinach and garnish with bacon bits, pecans and mushrooms (pecans taste best browned under 400°F heat).

Spoon over warm sauce and serve immediately.

CHEF COMMENTS

The best tasting warm spinich salad dressing ever. I have yet to receive one complaint and have many requests.

This is the best dressing I have ever had. I used onions and garlic since I didn't have shallots, and roasted pine nuts instead of pecans.

I have never been a fan of spinach until I tried this dressing. I did not have shallots, so I did not use them. Instead of mushrooms, I used carrots, and instead of pecans I used walnuts. Very Yummie! I am also single, so I am hoping the dressing stays for awhile in the frige. Thanks! July 5, 2007

I made this for Christmas dinner. There was not even a spoonfull left! Everyone loved it! I added boiled eggs and feta cheese and it gave it a creamier texture. The dressing was outstanding! I think you could reduce it down to a thicker consistency and it would make a great sauce for grilled chicken or grilled salmon served over the fresh spinach salad. December 26, 2010
