1 jar (6-1/2 oz.) marinated artichoke hearts, chopped
1/2 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed dry, and finely chopped
1/2 cup mayonnaise
1/2 cup freshly grated Parmesan cheese
1-1/4 cup coarsely grated Monterey Jack cheese
1 clove garlic, minced

Instructions

Preheat oven to 350°F. In a large bowl, combine artichoke hearts, spinach, mayonnaise, Parmesan cheese, 1 cup Monterey Jack cheese and garlic, stirring until combined. Put in two 1 cup ramekins or other small baking dish, and sprinkle with remaining 1/4 cup Monterey Jack cheese. Dip may be prepared up to this point one day ahead and chilled, covered. Bake dip in middle of oven until cheese is melted, about 15 minutes. If you want the cheese to brown, put under broiler for a few minutes. Serve dip warm with taco chips or crackers.

I got up early to make things for our Halloween party tonight. Made it and tried it over and over. It was so good that I have to go to the store and get everything to make more. Just to let you know it was very good. I will stay out of the next batch until friends get here.

My friend's husband made this dish, exactly per the instructions, for a dinner we had at their house recently. It was only supposed to be the appetizer and I had to refrain from licking the baking dish.
I am combining the ingredients before I leave tonight to bring to a friend's house, and will pop it in for the 15 mintues as we get the rest of our meal ready.
By far, and I mean by FAR, the best SA dip I've had, and I happen to be an addict!
