Smoked Oyster Stuffing

1 pkg. seasoned croutons / bread stuffing
1 tbsp. sage
1 md. onion, diced
3 stalks celery, diced
1 cube butter
2 to 3 cans chicken broth (depends on how moist you want it)
2 cans smoked oysters

Instructions

Melt the butter. Add the onion and celery and sauté until tender. Add the broth and heat. Pour over the croutons. Add the smoked oysters, oil and all. Mix. Pour into buttered pan and cover with buttered foil. Bake for 20 minutes at 350°F then remove foil and cook for an additional 10 minutes.

If you want to stuff your bird instead of baking, follow directions on crouton bag for amount of chicken broth as the stuffing will soak up the juices inside your turkey. The oysters will also give your turkey an additional hint of flavor.

This is a recipe that my father makes every time he makes a turkey. It has a truly wonderful smokey flavor.

I think it is a great recipe and easy to use. The grade of smoked oysters makes a big difference. I would have preferred to use fresh but in Hawaii a pint of oysters is hard to find so I was glad to find a smoked oyster recipe. The smoked oysters i purchased weren't the best so a lot of the flavor was lost. So make sure you buy some big flavorful ones. I like to bake my stuffing and I recommend adding an egg to the mix before baking it. I will certainly use this recipe again with better oysters.
