INGREDIENTS

1/2 cup margarine
1 cup flour
1/2 cup sugar
2 tsp. baking powder
1/2 cup milk
2 cups rhubarb, chopped
1 cup hot water
1 cup sugar
Cinnamon

INSTRUCTIONS

Melt margarine in 8-inch pan. Make a batter of the flour, 1/2 cup sugar, baking powder and milk. Spoon batter over melted margarine. Place rhubarb over batter. Stir 1 cup sugar into 1 cup hot water until it dissolves. Pour over rhubarb. Sprinkle with cinnamon. Bake for 40 minutes at 350°F. Serve with ice cream.

It is very easy to make and it tastes really good...didnt add cinnamon cause we dont like it though. But I will make this again :) Thanx for the recipe. August 2, 2010
