Pecan Pancakes with Buttered Pecans

1/2 cup chopped pecans
1 tsp. sugar
1-1/2 cup flour
2 tsp. baking powder
1/2 tsp. salt
1-1/4 cup milk
2 lg. eggs seperated
2 tsp. unsalted butter (melted)
1 tsp. vanilla

Buttered Pecans

1/2 cup unsalted butter
1 cup coarsely chopped pecans

Instructions

Combine pecans and sugar in processor and finely chop. Sift flour, baking powder and salt into large bowl. Stir in pecan mixture.

In medium bowl, whisk together: milk, egg yolks, butter and vanilla. Add to flour mixture.Stir until blended. Beat egg whites in seperate bowl until soft peaks form and fold into batter until blended.

Heat griddle or skillet over medium heat until hot enough to sizzle a drop of water. Brush pan with vegetable oil. Pour 1/4 cup of batter into pan and turn heat to med.-low. Cook until top of pancake covered in bubbles, turn and cook till lightly brown on other side.

While pancake is cooking: Melt butter in small saucepan, add pecans and stir until lightly browned (about 3 minutes)Spoon mixture over pancakes and serve with warmed syrup.
