1-1/4 cup all-purpose flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1-1/4 cup buttermilk
2 tbsp. vegetable oil
1 cup fresh or
frozen blueberries (optional)

Instructions

In a bowl, combine flour, sugar, baking powder, baking soda and salt. Combine buttermilk, oil and egg; stir into dry ingredients and mix well. Fold in blueberries if desired. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown.

I love pancakes. They are rhe real breakfast of champions. Yours truely is one of them. My feild of endeavor is slinging the hot bull all over the place...... kidding, of course! But seriously panckes are delicous and all I see in the recipe that I would do differantly is pour the pancke batter onto the griddle from a tablespoon. this is like making silver dollar size pancake. Good, basic pancake recipe. I made it because I happened to
have some buttermilk. Very tasty. I recommend putting some
wild mulberries on your cakes. They are fabulously sweet and
juicy in late June and abundant in wooded areas.
