Mozzarella and Roma Tomato Stuffed Vine Leaves
1 recipe scale / convert
12 preserved vine leaves, drained, rinsed and patted
1 cup (250) fresh roma tomatoes, finely diced
1 cup (250) Tre Stelle® Shredded Mozzarella
1/4 cup (50) fresh mint, finely chopped
1 clove garlic, minced
1 tsp. (5) fresh lemon rind, grated
2 tbsp. (25) olive oil
salt and pepper to taste
sliced lemon for garnish
In a medium bowl combine tomatoes, mozzarella, garlic, lemon rind, salt and pepper and mint; set aside.
Place vine leaves on a flat surface and place a teaspoon of filling on the stem end of each leaf.
Roll up firmly turning edges as you roll.
In a medium skillet add oil and place vine leaf parcels in pan to warm gently on each side.
Garnish with lemon slices and serve immediately.
Makes 12 parcels.
