Mandamin (Corn -- Sioux-Style)

INGREDIENTS
1-1/2 cups corn
1/4 cup diced green bell pepper
1/4 cup diced mild red pepper
3 tbsp. oil
3 shallots, chopped
Salt and pepper
INSTRUCTIONS
Heat the oil and fry the peppers with the shallots for 3 minutes or so. Add the corn, salt and pepper. Cook for a further 5 to 10 minutes at low heat and serve.
