Italian Doughnuts

INGREDIENTS
1-1/2 cups flour
1/2 cup granulated sugar
2 tbsp. baking powder
1/2 tsp. salt
1 container (15 oz.) ricotta cheese
4 eggs
1 tbsp. vanilla
Cooking oil for frying
Sifted powdered sugar or granulated sugar or cinnamon with sugar
INSTRUCTIONS
Mix together in a bowl the flour, granulated sugar, baking powder and salt. Set aside.
In a large bowl beat ricotta cheese with a mixer on medium till smooth.
Add the eggs and vanilla and beat till mixed.
Then add the dry ingredients. Beat with mixer on low speed until just combined.
Let batter sit for 30 minutes.
Preheat oil to 365ºF in a deep fryer.
Place well rounded teaspoonfuls no more than four or five at a time into the hot oil.
Cook for 2 1/2 to 3 minutes or till golden brown,
turning doughnuts once.
Using a slotted spoon remove doughnuts and place on
paper towels to drain.
Cool completely and then shake doughnuts in a bag with the sugar mixture of your choice.
CHEF COMMENTS
I've never made doughnuts before, so I chose this recipe
to try because you didn't have all the rolling and cutting with a doughnut cutter and I thought they might be a little easier to make.
