1 grapefruit, peeled and sectioned
1 cup lettuce
1/2 tbsp. canola oil
1-1/2 tbsp. honey mustard
1 tbsp. sunflower seeds
Peel and remove membrane from grapefruit sections. Tear lettuce. Mix oil and honey mustard. Toss the lettuce with the oil/mustard mixture. Place in a bowl or on a plate. Arrange grapefruit sections on top of the lettuce. Sprinkle with sunflower seeds.
Very light, refreshing salad. I enjoy it for breakfast/brunch too.
