2 lb. shredded potatoes
1 md. onion , chopped
1/2 green bell pepper, diced
3 eggs
1/3 cup buttermilk
1 cup cheddar cheese
1 cup German-style saurkraut
1 cup cubed ham


In a 12" well buttered skillet, add potatoes. Cook on low. Add green pepper and onions. Combine eggs and milk together. Whisk until blended well. Pour egg mixture over ingredients in the skillet. Cook covered until potatoes are tender (30 minutes). Top with ham, kraut and cheese. Serve as soon as cheese has melted.
