INGREDIENTS

1-3/4 cups flour
1 tbsp. sugar
2-1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup unsweetened cocoa powder
1 cup mini chocolate chips
3 oz. cream cheese, room temperature
1 egg, beaten
3/4 cup milk
1/4 cup butter, melted
1 tsp. vanilla

INSTRUCTIONS

Spray "Texas" size muffin cups with cooking spray. Stir together dry ingredients. Cut in cream cheese. Add chocolate chips. Stir together egg, milk, vanilla and melted butter. Add to flour mix and stir just until moistened. Spoon into muffin pan. Sprinkle with cinnamon sugar if desired. Bake at 400°F for 25 minutes. Cool in pan 10 minutes, then remove to rack.

1 batch will make 6 large muffins or 12 normal-size muffins.
