Chocolate Cream Cheese Frosting

INGREDIENTS
3 oz. semi sweet chocolate
1-1/2 tbsp. water
3 oz. cream cheese
1/2 tsp. vanilla
1-1/4 cups powdered sugar
INSTRUCTIONS
Microwave chocolate with water at high for 2 minutes. Stir until chocolate is completely melted and smooth. Cool to lukewarm. (Or heat with water in sauce pan over very low heat stirring constantly until just melted. Remove from heat and cool five minutes.) Beat in cream cheese and vanilla until well blended. Beat in sugar gradually until well blended and smooth.
CHEF COMMENTS
2-1/4 cups makes enough for a 9-inch cake.
