Cherry Balsamic Compote

This compote is delicious on ice cream or pancakes.

2 cups pitted sweet cherries
1/4 cup water
1/4 cup sugar
1 tbsp. balsamic vinegar

Instructions

Mix water and sugar together over medium heat until fully combined. Allow the syrup to simmer over medium heat until the sugar just begins to darken to a very light caramel color, about five minutes.

Add the cherries and cook for two minutes. Add the balsamic vinegar and cook until the cherries have softened and the syrup has thickened. Remove the compote from the heat and allow to cool slightly before serving with vanilla ice cream.

Whenever I have a bunch of cherries, I make this compote or even double it. It's super easy to make but tastes complex. Serve over vanilla, chocolate, or goat's milk ice cream.
