INGREDIENTS

3 eggs, beaten
2/3 cup chicken broth
1/2 cup heavy cream or evaporated milk
1/2 tsp. salt
1/4 tsp. Tabasco
1/4 cup Parmesan cheese
2 cups fresh broccoli, chopped
1 cup Swiss cheese, grated
1/4 cup scallions
1 9-inch unbaked pastry shell

INSTRUCTIONS

In a bowl beat eggs with broth, cream, salt and Tabasco. Set aside. Prick bottom and sides of pastry shell and bake at 450° for 5 minutes. Remove from oven. Sprinkle pastry shell with 1/2 of Parmesan cheese. Scatter 1/2 broccoli, 1/2 of Swiss cheese and 1/2 of scallions into shell. Repeat broccoli, Swiss cheese and scallion layers. Pour egg mixture over these ingredients and sprinkle with remaining Parmesan cheese. Bake at 450° for 10 minutes. Reduce oven temperature to 325° and bake 25 minutes longer or until knife inserted in center comes out clean.

I agree, better to use deep dish crust--took it to
work and everyone wanted the recipe. I also used the
basic recipe and instead of broccoli-made it with
bacon and ham January 27, 2007

Made this quiche recipe for a work party. It was great! Everyone wanted the recipe and I just quickly went on the internet @ work to find one. fyi.... you may need to cook it a little longer than suggested (around 10 min) February 23, 2010
