SERVINGS

INGREDIENTS

1 cup Amish Friendship Starter
1 cup oil
1 cup sugar
1/2 tsp. baking soda
1 tsp. cinnamon
2 cups all-purpose flour
1/2 cup milk
3 lg. eggs
1 pkg. instant vanilla pudding
1-1/2 tsp. baking powder
1 tsp. vanilla
1/2 tsp. salt

INSTRUCTIONS

Mix together all of the ingredients in a large non-metal bowl. In a separate bowl, mix 1 tsp. cinnamon and 8 tbsp of sugar. Sprinkle sugar-cinnamon mixture into 2 well greased loaf pans before pouring in the batter. Bake at 325°F for one hour.

Makes 2 VERY moist loaves!<br />

You can also subsitute banana pudding and 2 mashed bananas for the vanilla pudding.

I have this recipe and when ever I make it everybody raves about it. It also makes wonderful muffins. I like to butter a tube pan or bundt pan and sprinkle the inside with cinnamon/sugar combination. I do this with muffins too. I like the idea of using two bannas instead of pudding, that omits the sugar. By doning this you could probably omit the oil too. I'll give it a try. I'm on Weight Watchers and that would really cut down on the sugar and oil. Thanks that's a big help. I don't see the recipe for the Amish starter. That might be helpful for those that don't know it. Here is my recipe for the starter. 1 cup milk, 1 cup flour, and 1 cup sugar. Put this in a large zip loc bag. For the first 5 days just mush the bag a few times. On day 6 add 1cup flour, 1cup milk, and 1 cup sugar. Mush the bag for 4 more days. Pour and squeeze contents into a large plastic bowl. Add 1 cup milk, 1 cup flour, and 1 cup sugar. Stir and pour 4 1cup "starters" into large ziplock bags. Give these and a copy of the recipe to your loved ones. April 14, 2004

Just some variations:
Instead of vanilla pudding and vanilla extract, use lemon pudding and lemon extract, add 1 Tbsp poppyseeds

-or- coconut cream pudding and coconut extract - add 1 cup coconut ( a favorite!)

-or- instead of the applesauce, use pumpkin pie mix,substiture pumpkin pie spice for the cinnamon and add 1 cup chopped pecans(optional).

You can always use applesauce in place of the oil to get a lower calorie bread. November 27, 2005

My kids love this! I always keep one or two bags of the starter in the freezer so I have it on hand. When we moved I lost the recipe so I am very happy to find it again. Whenever I need to bake for fundraisers this is perfect! I just split the batter into 4-5 mini loaf pans wrap it colored seran and its good to go. The more cinnamon sugar you put in the pan and on top before cooking the better. Plus your house smells so good when you bake it. I always keep a packet of yeast and a box of vanila pudding in the cabinet so its on hand when I need it. July 8, 2008

I just have a question. I used to make this many years ago and then lost my starter when my freezer became unplugged while out of town. Once I make the starter and freeze it, do I just make the bread when I'm ready or do I have to start from the 10 day cycle again. Also, if I start the cycle again, using the starter batch, do I have to add the yeast and other ingredients at day one? I love this bread, but I'm alittle confused. Thanks March 31, 2009
