Low-Fat Chipotle-Tomatillo Salsa

INGREDIENTS
2 lbs. tomatillos, husked & diced
2 cloves garlic, minced
4 chipotle peppers, softened and chopped
1 bunch fresh cilantro leaves, chopped
1 cup vegetable stock
juice of 1 lime
INSTRUCTIONS
Saute the tomatillos, garlic, chipotles, and cilantro. Add the stock and lime juice. Cook on low heat for 15 to 20 minutes.
CHEF COMMENTS
You could serve this on top of your favorite burger, as a side dish, or with chips.
